Today, I tried making sparkling jelly using Lily’s fruit mix.

The finished product had a mild fizz, just a slight tingle, and a refreshing aftertaste. I added about 30g of sugar, but the jelly itself was subtly sweet. However, the sweetness of the fruit balanced it out nicely.

Sparkling Jelly with Fruit Mix Recipe (Instructions)

(1) In 50g of hot water, add 10g of gelatin and 30g of sugar, and stir well until smooth.

(2) To (1), add 250g of sparkling water and canned fruit mix (240g fruit, 180g syrup), stir gently, and it’s done. The surface was covered with carbonation bubbles.

(3) Cover with plastic wrap and refrigerate for 1.5 hours. The large bubbles had collapsed.
