Today, I tried simmering 1kg of pork in a sweet and savory sauce with soy sauce and sugar.
The result was a sweet, *kakuni*-style flavor, perhaps due to the generous amount of sugar. Also, the meat seemed to have fallen apart during simmering, so it turned out more like *soboro* (ground meat).
