・First, I put 100g sugar, 100g soy sauce, 100g sake, 50g mirin, 1g ginger, and 1kg pork into a pot. The small brown pieces are ginger.

・Next, I added the roughly chopped onions.

・After that, I simmered it on low heat for about an hour. This time, I reduced the water to 100g, so the liquid evaporated in about an hour. Thanks to that, the pork didn’t lose its shape significantly. The onions, as usual, melted away completely.
