Taste the budding of spring – moist pound cake with green tea and azuki beans

Preparation: Preheat the oven to 170 degrees Celsius. Line a mold with a cookie sheet.
Put the butter in a bowl and knead with a whipper until smooth. Add the sugar in two parts and mix to hold in the air for about 3 minutes until the whole mixture is white and fluffy and creamy.
Add the beaten egg in three batches, mixing well each time to prevent separation. If the mixture is well emulsified here, the moistness of the finished product will be very different.
Sift in the flours (flour, matcha, and BP) all at once and switch to a rubber spatula. Scoop up a large scoop from the bottom and mix quickly as if cutting.
When the mixture is 80% mixed, add the boiled adzuki beans. When the mixture is evenly mixed, it is ready. Be careful not to mix too much or the dough will become stiff.
Pour the dough into the mold and bake for 40-45 minutes at 170℃. If the dough does not stick to the skewer, it is done.

The keys to success are temperature and mixing. If the butter and eggs are cold, they will separate and cause the baked product to be dry. Also, after adding the flour, mixing in a “scoop-and-drop” manner rather than “kneading” will prevent too much gluten from being released and will result in a delicate, moist texture.
