Inokashira Line Nostalgia – Lemon-scented Baked Cheesecake – A Taste of Memories Traveling with Shuri
A baked cheesecake with a nostalgic yet new flavor, perfect for the deepening autumn season. It is inspired by the scenery seen from the train windows of the Inokashira Line and the warm interactions between people. The refreshing aroma of lemon accents the cake, creating a moment of peace and tranquility. In response to the trend of paying attention to information and storytelling content from celebrities, we created this cake by imagining the most special sweets that “Shuri-san” has encountered along the Inokashira Line. No special technique is required so that anyone can make them without fail.
Ingredients (for 1 15cm round mold)
| cream cheese | 200g (brought to room temperature) |
| granulated sugar | 80g |
| egg | two (objects) |
| fresh cream | 100ml |
| weak flour | 1 tablespoon |
| lemon juice (ingredient) | 1 tablespoon |
| Grated lemon peel | 1/2 portion |
| Cookie (for foundation) | 80g |
| Unsalted butter (for the base) | 40g (to dissolve) |
way of making
- The beginning of the adventure! Foundation building]First, let’s start with the foundation, where the memories will take place. Place the cookies in a heavy plastic bag and beat them to powder with a rolling pin. Add melted unsalted butter and mix well. Place a cookie sheet in the bottom of a mold (a 15cm round mold with a removable bottom is recommended) and press the cookie dough into the sheet to flatten it. Refrigerate for 15 minutes to firm up.
- [Magical dough making].Place the cream cheese at room temperature in a bowl and knead with a rubber spatula until smooth. Switch to a whisk and add the granulated sugar in several additions, mixing well until white and fluffy. This is the secret to good taste!By making sure it is well aerated, you will get a smooth mouth feel.
- [Lovingly mixing]Add the beaten eggs in three additions, mixing thoroughly each time. Next, add the cream, lemon juice, and grated lemon peel. The fresh aroma of lemon will fill your kitchen and lift your spirits.
- [Tips on how to avoid making mistakes.Sift in the flour and mix gently with a rubber spatula until no flouriness remains. The key is to mix quickly but carefully, because if you mix too much, the mixture will become stiff.
- [The climax of the excitement! Baking]Remove the base from the refrigerator, pour the cheese dough on top, and bake in a preheated oven at 170℃ for 10 minutes, then lower the temperature to 160℃ and bake for 30-40 minutes. Bake for 30 to 40 minutes at 160°C. If the dough does not stick to the skewer, the dough is done. If it looks too brown, cover it with aluminum foil during baking.
- [Waiting for the blissful moment]After baking, remove from the oven and allow to cool at room temperature until the heat is removed. Then, refrigerate for at least 3 hours, preferably overnight, to allow the flavors to meld and the cake to harden even more. You will enjoy the moist texture when it cools.
Recipe Points
This baked cheesecake is made by bringing cream cheese to room temperature and thoroughly mixing in eggs and granulated sugar, resulting in an incredibly smooth and uniform batter. The generous use of lemon zest and juice adds a cool, refreshing flavor that evokes the depths of autumn, and a delicious taste that you will never get tired of. The biscuit base should be crushed a little coarsely to accentuate the texture. Chilling the biscuits slowly in the refrigerator will allow the dough to settle and become richer in flavor. Easy to make yet authentic in taste, this is truly a masterpiece presented by “Today’s Homemade Recipes!
