You want to forget your hectic daily life and spend a moment of peace and tranquility. This is the wish come true with the melt-in-your-mouth green tea miruku daifuku. The bitterness of the green tea and the gentle sweetness of the milk blend with the glutinous rice flour dough, while the melt-in-your-mouth red bean paste and butter are the hidden flavors. One bite will bring you a blissful healing experience that will light up your heart with a warm glow. We have focused on a process that is easy to make in the microwave so that even beginners will not make mistakes.

Ingredients (for 6 pieces)

Rice flour (for confectionery) 80g

(cow’s) milk 120ml
Matcha powder (for confectionery) 1 tablespoon
Potato starch (for beating flour) proper quantity

way of making

  1. Now, let the healing journey begin! First, let’s prepare the an-butter filling. Divide the store-bought red bean paste into 6 equal portions, and roll each portion into a flat circle. Cut the butter into 6 equal pieces as well, place it on the center of the anko and roll it up again, lightly wrapping it around the anko. Now the melted an-butter is ready. Chill it in the refrigerator to make it easier to wrap.
  2. Next, prepare the daifuku dough. In a heatproof bowl, combine rice flour, sugar, and matcha powder and mix well with a whisk. The secret to avoiding lumps is to mix the flour thoroughly here.
  3. Once the flours are mixed, add the milk, a little at a time, until the mixture is smooth. At first the mixture will be sloppy, but as it is mixed, it will become a silky matcha milk-like batter.
  4. Cover the bowl fluffily with plastic wrap and microwave (600W) for 1 minute 30 seconds. Once removed, mix thoroughly from the bottom with a rubber spatula. It is okay if there are still some liquidy parts. This is where the fun begins!
  5. Cover with plastic wrap again and microwave (600 W) for 1 minute. Remove and mix repeatedly until the dough becomes a transparent, glutinous mass. (The guideline is 2 to 3 times. Take your time and feel the glutinous texture increase with each mixing).
  6. Gently transfer the sticky dough onto a starch-lined baking sheet. After the heat is removed, knead the dough lightly with your hands to make it smooth. At this point, the gentle aroma of green tea wafting from the dough will soothe you.
  7. Divide the dough into 6 equal portions and flatten each portion out with the palm of your hand. Place the chilled an-butter filling in the refrigerator in the center, and gently wrap it in the dough to roll it up. Carefully shape the dough as if you are wrapping a precious treasure.
  8. It is completed! The plump, round matcha daifuku shines in your hands. Enjoy the freshly made mochi mochi texture. If you refrigerate it a little, the an-butter will melt and it will taste even better!
