A year-end treat! “Eel pie-like sablefish with aromatic caramel flavor.”
Concept
Perfect for a special treat during the year-end and New Year’s holidays, this sablet has an irresistible combination of sweet and savory caramel and a pie-like, crunchy texture. The unique flavor of eel pie is recreated in a handy sable, creating a luxurious moment to be enjoyed with a hot beverage. It is a very special item that makes a great souvenir.
Materials
| Material name | amount |
|---|---|
| weak flour | 150g |
| almond pudding | 30g |
| unsalted butter | 80g |
| granulated sugar | 50g |
| egg yolk | 1 piece |
| vanilla essence | small quantity |
| Caramel sauce] Fresh cream | 50ml |
| Caramel sauce] Granulated sugar | 30g |
| Caramel Sauce] Unsalted butter | 10g |
| Finishing touches: granulated sugar (or granulated sugar) | proper quantity |
| Finishing touches] Coarse salt | pinch (of something) |
How to make…
- Now, let the adventure begin! First, let’s make the sable dough. Bring the unsalted butter to room temperature. Sift together the flour and almond pudding.
- Place unsalted butter at room temperature in a bowl and knead with a rubber spatula until creamy. Add the granulated sugar, and with a whisk, beat until the mixture is white and fluffy. This is an important step that determines the mouth feel of the sable.
- Add egg yolks and vanilla essence. When emulsified and smooth, it is ready!
- Add the flour and almond pudding all at once and mix with a rubber spatula. When the mixture is no longer powdery and comes together, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes. The chilled dough will harden, making it easier to shape.
- While the dough is resting, make the savory caramel sauce. Place the granulated sugar and water (about 1 teaspoon not in quantity) in a small saucepan over medium heat. Heat evenly, shaking the pan as it tends to burn easily.
- When the granulated sugar has melted and is slightly golden brown, remove from heat and gradually add the warmed cream. Be careful, as it tends to splatter. Finally, add the unsalted butter, melt and stir, and the caramel sauce is ready. Remove from heat.
- Take the dough out of the refrigerator, place it on a floured board (strong flour is recommended), and roll it out with a rolling pin to a thickness of 3 mm. The key is to roll out the dough into a rectangular shape like a pie sheet.
- Spread a thin, even layer of caramel sauce over the surface of the dough. Be careful not to spread too much, as it will become sticky! Sprinkle coarse sugar and coarse salt on top. This is the secret to the sweet and savory flavor and crunchy texture!
- Fold the dough in half and roll it out again, pressing down lightly with a rolling pin. This is repeated two or three times to create a pie-like layer. The texture of the dough is very impressive because of the time and effort that goes into making it!
- Preheat oven to 170°C. Cut the dough into 5mm pieces and place on a baking sheet lined with a cookie sheet. Place the dough in a slightly spaced pattern to ensure even baking.
- Bake in a preheated oven at 170°C for 15-20 minutes until browned. The baking time will vary depending on the oven, so please adjust accordingly. When the sweet and savory aroma of caramel spreads throughout the room, it is a signal that the baking is finished!
- After baking, remove from heat by placing on a net. As it cools, the caramel will harden, giving it a more zesty texture. Now comes the climax of the excitement!
- Enjoy the crunchy eel pie-like sablefish with a savory caramel flavor with a cup of warm tea or coffee. One bite and you will enjoy a blissful time, as if your year-end fatigue will disappear.
Here is the secret to the delicious taste! Point
The main attraction of this sablet is the sweet and savory harmony of the caramel sauce and coarse salt, and the crunchy texture created by folding it like a pie. Careful attention to the process of chilling the dough and folding it after applying the caramel sauce gives it an authentic, store-bought flavor. The degree of baking is also important, and browning the dough thoroughly makes the savory flavor stand out. Please enjoy it with all your senses.
