Golden Horseshoe Mini Pound Cakes – with Chestnut and Pumpkin of Victory
These mini pound cakes are richly flavored with chestnuts and pumpkin, inspired by JRA’s victories. Celebrate your small daily victories with this somewhat nostalgic, yet new, golden-brown, glistening sweet treat. We have devised this recipe so that even beginners can make it easily and without fail.

way of making
- Preheat the oven to 170°C. Grease a pound cake mold (for 2 mini-sized or 1 18 cm) with melted butter and lightly dust with strong flour. Dust off any excess flour. This will prevent the dough from sticking together!
- (Sift together the flour and baking powder from (A). This step is the secret to making a fluffy pound cake.
- In a bowl, add butter that has been brought to room temperature and mix well with a whisk until creamy. Make sure it is fluffy and aerated!

- Bake in a preheated oven at 170°C for 30-35 minutes. When a bamboo skewer is inserted and no raw dough sticks to it, it is done baking. The sweet and savory aroma wafting out of the oven is truly the aroma of happiness!
- After baking, remove from the molds, remove from heat, wrap in plastic wrap and cool completely. The next day, the flavors will blend together and it will taste even better.
