A discussion of recent search trends

Looking at Google search trends, at first glance it appears that people’s names and current events unrelated to sweets and foods are at the top of the list. However, we noted that “Hataraku Cell” ranked among them. This popular anime brings themes such as health and immunity closer to home by portraying anthropomorphic cells working inside our bodies. In today’s world, where health awareness has increased dramatically after the Corona disaster, it is evident that there is a growing segment of people who are becoming more health conscious through entertainment. This may suggest that there is a growing demand for value-added sweets that not only taste good, but are also “good for you” and “guilt-free. For example, we can assume that there is a growing interest in sweets made with ingredients that are linked to intestinal activity and immunity enhancement, or health-conscious homemade sweets such as low-sugar or gluten-free. There is also a noticeable search for the astronomical phenomenon of the “snow moon,” indicating a deep-seated sense of valuing nature and the changing seasons. This psychology of seeking a sense of seasonality and small daily pleasures may lead to a tendency to seek handmade sweets that incorporate seasonal ingredients and that are beautiful to look at.

Our creative recipes

Zero guilt! Soft herb-scented “marshmallow moon in the sky”.

We have devised a sugar-free marshmallow that will soothe your mind and body with just one bite, away from the hectic pace of everyday life. They feel soft and light in the mouth, like snow moons floating in the night sky. The gentle aroma of herbs brings tranquility to your mind. You are conscious of your health, but don’t want to resist sweets! This is an exquisite sweet for you, with zero guilt.

material

Material name amount
sheet gelatin 10g
water (esp. cool, fresh water, e.g. drinking water) 50ml
erythritol (artificial sweetener) 50g
Lavender tea (or chamomile tea) 100 ml (dark extract)
lemon juice (ingredient) 1 teaspoon
Powdered sugar (for decoration, or erythritol powder) proper quantity
Cornstarch (for flour) proper quantity
Dried lavender (for garnish, optional) small quantity

way of making

  1. Now, let the healing journey begin! First, soak the plate gelatin in plenty of cold water for about 5 minutes to soften it. This will create the base for the fluffy texture of the marshmallow.
  2. Next, place the lavender tea and erythritol in a small saucepan over medium heat. Heat slowly, stirring with a wooden spoon until the erythritol is completely dissolved. The key is to watch it gently so that it does not boil over. Feel the pleasant aroma of lavender spread throughout your kitchen and calm your mind.
  3. When the erythritol has dissolved, turn off the heat, add the well-drained gelatin and dissolve thoroughly in the residual heat. Mix carefully until it becomes a clear and smooth liquid. Lemon juice is also added here to give a crisp accent to the aroma and taste.
  4. In a separate bowl, transfer the gelatin solution off the heat and beat with a hand mixer. Slowly at first, then gradually increase the speed to high. The mixture will become fluffy and voluminous, like white clouds spreading across the sky. The key to this “marshmallow moon in the sky” is to whip it thoroughly until the whole mixture is pure white and horns stand out! About 7 to 10 minutes is the standard time, but the texture will vary depending on the whisking time.
  5. Sprinkle a thin layer of cornstarch (not included) over the mold and pour in the whipped marshmallow mixture. For a more beautiful finish, gently smooth the surface with a flat spatula, then lightly tap the surface against a table to release the air. Refrigerate the marshmallow for at least 2 hours to harden. This is the preparation stage for the climax of the excitement!
  6. Once the marshmallow has hardened, remove it from the mold and cut it into desired sizes with a knife. If you cut them into squares or half-moon shapes, you have created a “marshmallow moon! Lightly dust the surface of the cut marshmallow with a mixture of powdered sugar and cornstarch, and garnish with dried lavender to complete this beautiful looking dish.

point

The biggest secret to making these delicious marshmallows is to let the gelatin solution cool thoroughly before whisking, and to continue whisking patiently with a hand mixer until the mixture becomes fluffy! The air will give it that unique light texture. We also recommend that you arrange the herb tea with your favorite flavor, such as chamomile or lemongrass, in addition to lavender. Since they are sugar-free, you can reach for as many as you want without feeling guilty!
