Chocolate mousse with two faces: light and dark. The harmony of the softly sweet white chocolate mousse and the bittersweet, rich bitter chocolate mousse is like a game story. It is a creative sweet that even beginners can try, with its beautiful appearance and simple ingredients, but with a deep flavor.

- Now the adventure begins! Start by preparing both mousses. For each, sprinkle 1 tablespoon of powdered gelatin into 1 tablespoon of water and allow it to soften. Dissolving it in cold milk tends to cause lumps, so take your time here.
- Make [light white chocolate mousse]. Chop the white chocolate into small pieces and place in a heatproof bowl. Heat 50 ml of milk in a small saucepan until just before boiling, and pour it into the bowl of chopped white chocolate. Mix slowly with a rubber spatula until the chocolate is melted.This is the secret to the delicious taste! Gently stirring the mixture will give it a smooth texture.
- Heat the blended gelatin in a microwave oven (500 W) for 10 to 20 seconds to melt it completely. Add the melted gelatin to the chocolate solution in (2) and mix well. The gelatin will be incorporated into the mousse and the mousse will harden beautifully.
- In a separate bowl, whisk 100 ml of heavy cream. Ideally, the cream should be thick and 8 parts thick, one step short of forming a corner. Be careful not to whisk too much, as it will make the mixture less smooth.
- (Add the chocolate liquid from (3) little by little to the whipped cream from (4) and mix gently, scooping up from the bottom.This is the climax of the excitement! The “light” mousse is completed.
- Pour in the white chocolate mousse (5) until the glass is half full. Tap the glass lightly to release the air, and refrigerate for about 30 minutes to harden. It does not have to be completely hardened, but it is OK if it hardens slightly.
- [Dark bitter chocolate mousse]. (Repeat steps (2) – (5) with bitter chocolate, 50 ml milk, and 100 ml cream. The basics are the same, but the bitter chocolate may be difficult to melt, so mix quickly while the milk is hot. Here a “dark” mousse is created.
- Remove the chilled glass from the refrigerator and gently pour the bitter chocolate mousse (7) on top of the white chocolate mousse (6). Carefully pour the mixture so that there are two layers. The contrast between the two layers will give the cake a beautiful appearance.
- When all the mousse has been poured, place it in the refrigerator again, this time to chill and harden thoroughly for at least two hours. The chilling process creates the perfect melt-in-your-mouth texture.
- Just before serving, sprinkle a thin layer of cocoa powder over the top and garnish with a sprinkling of alazan and mint leaves to complete the dish! The shimmering arazine adds sparkle to this world of light and darkness. Enjoy!
