Enchanting autumn-colored macarons “Pumpkin Caramel Rouge
Enjoy the afterglow of Halloween while savoring the deepening autumn with all five senses with these luxurious macaroons. The adult taste of the gentle sweetness of pumpkin and bittersweet caramel is expressed in vivid shades of rouge. The macarons are based on “Italian meringue,” which is easy for even beginners to try, and aim for an ideal texture with a crispy outside and a moist, sticky inside.

way of making
- Preheat oven to 150°C and prepare a baking sheet lined with macaroon sheets. Sift together the almond pudding and powdered sugar. Mix the egg white (A) with the food coloring and set aside.
- [Making Italian meringue] In a small saucepan, heat the granulated sugar (for the syrup) and water and simmer until the temperature reaches 118°C (118°F) to make the syrup. At the same time, start whisking the egg whites (B) in a separate bowl to make a firm meringue with a horn. When the syrup reaches 118°C, add it to the meringue in thin drops and whisk further to make a shiny, firm meringue. This is the secret to the delicious taste! Whisk the meringue firmly until it cools down, so you can make a steady cock.
- Make macaroon cock] Put the sifted almond pudding and powdered sugar in a bowl, add the egg whites colored with food coloring (A), and mix together. Mix well until there are no lumps, then add 1/3 of the Italian meringue mixture you made earlier and mix with a rubber spatula to scoop up the mixture from the bottom. At this stage, the mixture should still be stiff.
- Add the remaining Italian meringue in two batches and macaronage. Mix with a rubber spatula to press the dough against the edge of the bowl, stopping when the dough is just enough to slowly fall in ribbons! The trick to avoid failure is not to overmix. It should become shiny and flow thickly.
- Put the finished dough into a squeeze bag fitted with a round tip, and squeeze out a circle about 3 cm in diameter onto the macaron sheet. Tap the whole baking sheet lightly to release excess air. This step will help to create a beautiful “pie” shape.
- Allow the squeezed out macaron cock to dry for 30 minutes to 1 hour. Let it dry thoroughly until you can no longer touch the surface with your fingers and feel the dough sticking to it. This is an important process to bring out the pie.
- Bake in a preheated oven at 150°C for 12 to 15 minutes. Listen to the crispy sound of freshly baked macaroons!
- [Making pumpkin caramel ganache] Put the granulated sugar (for caramel) in a small saucepan over medium heat, and when it changes color and caramelizes, turn off the heat and gradually add the warm cream and stir (be careful, it tends to bounce!). Stir in the cream, stirring constantly, until the mixture is smooth and creamy. Add the unsalted butter and stir to melt.
- Add the pumpkin paste and vanilla extract to the caramel sauce and mix until smooth. Refrigerate for 30 minutes, and when the mixture is firm enough to squeeze, put it into a squeeze bag fitted with a round tip.
- After removing the heat, squeeze a generous amount of pumpkin caramel ganache onto the macaron cock and sandwich it between the other cock and you are done! Letting it sit overnight in the refrigerator will help the ganache and the cock blend together and make it even more delicious.
