Hello everyone, and welcome to “Today’s Homemade Recipe. Welcome to “Today’s Homemade Recipe of the Day,” today, Tuesday, November 18, 2025. It’s a slightly chilly morning, reminding us of the deepening autumn. The first day of winter has passed according to the calendar, and we can almost hear the sound of full-blown winter, but personally, I like this time of the year best when I can feel the deepening of autumn. In fact, today, November 18, is “Civil Engineering Day. This day was established to commemorate the anniversary of the founding of the Japan Society of Civil Engineers (JSCE), and to celebrate the number 11 for “soil” and 18 for “tree” in the word “Doboku” (civil engineering). It is also a day to be thankful for the important infrastructure that supports our daily lives, such as roads, bridges, and dams that we use without thinking. Today, as we feel the deepening of autumn, I would like to share with you a very special and creative recipe that will warm your heart and body. Keeping up with the changing trends as the season progresses, I would like to introduce you to some of the best homemade sweets!

A discussion of recent search trends
Today’s Google search trends show that public interest is diverse. Particularly striking are the top searches related to “Bakemono no ko” and its voice actors. This suggests that there may have been reruns of the animated movie or related events, suggesting nostalgia and a growing interest in a particular culture. There were also many sports-related words such as “Japan vs. Ghana,” “Samurai Japan,” and “Kobe vs. Hiroshima,” clearly indicating that sporting events are at the center of what people are talking about. On the other hand, interest in information related to health and disaster prevention, such as “Guillain-Barré syndrome,” “Sanriku earthquake,” and “Sakurajima volcanic eruption,” was also strong, indicating a sensitivity to social conditions.
Linking these trends to sweets and food culture, we can first consider visually pleasing, storytelling sweets inspired by fantasy elements such as “Bakemono no ko”. For example, colorful jellies that represent the world of the movie, or cookies that resemble the characters. To accompany sports games, snacks that can be easily eaten, macaroons and cupcakes that incorporate the colors of the team you are cheering for, etc., are likely to be appreciated. In addition, increased awareness of health and disaster prevention may lead to demand for nutritious dried fruits and nuts, or baked goods that can be stored for a long time. Simple, reassuring Japanese sweets that soothe the body and soul may also attract attention.

Amber no Tokimeki Cafe Pudding – with the scent of rum raisins
A fusion of nostalgia and novelty, this pudding is like stepping back in time. The melt-in-your-mouth texture and the mellow aroma of rum raisins gently envelop your senses. In this simple, unpretentious pudding, the almost forgotten “taste of those days” and “adult luxury” are hidden.
material
| Material name | amount |
|---|---|
| Pudding liquid | |
| egg | two (objects) |
| egg yolk | 1 piece |
| (cow’s) milk | 250ml |
| fresh cream | 50ml |
| granulated sugar | 50g |
| vanilla essence | several drops |
| Caramel sauce | |
| granulated sugar | 50g |
| water (esp. cool, fresh water, e.g. drinking water) | 1 tablespoon |
| boiling water | 2 tablespoons |
| Rum Raisin | |
| raisin | 30g |
| rum | 1-2 tablespoons (to taste) |
way of making
- Now, let’s start our journey to amber temptation! Let’s start by preparing the rum raisins. Place the raisins in a clean container and pour the rum into the container until it is completely covered. Soak them for at least 30 minutes, preferably overnight, to bring out their rich aroma. This aroma is what gives the pudding its depth.
- Next, make the caramel sauce. Place the granulated sugar and 1 tablespoon of water in a small saucepan over medium heat. Watch it until it turns an amber color, shaking the pan to prevent it from burning. This is the key! When it begins to turn brown, remove from heat and add 2 tablespoons of boiling water all at once. Be careful not to burn yourself as it bounces around. Once the heat is removed, pour the mixture evenly into the bottom of the pudding cups. This addition of boiling water keeps the caramel from hardening and gives it a thick texture.
- Now it is time to prepare the pudding liquid. In a bowl, combine the eggs, egg yolks, and granulated sugar and mix gently with a whisk. If you whisk too much, the mixture will lose its smoothness, so be aware that you are only “mixing”. Mix until the mixture turns white, then it is ready.
- In a separate saucepan, combine the milk and cream over low heat. When the edges of the pan begin to bubble, turn off the heat and add a few drops of vanilla extract. This warm milk aroma adds a gentle flavor to the pudding.
- Add the warmed milk and cream to the egg mixture a little at a time, mixing constantly with a whisk. If you add too quickly, the eggs will curdle, so please mix slowly and lovingly. Once all the ingredients are mixed, strain the mixture through a colander. This step will result in a surprisingly smooth texture.
- Gently pour the strained pudding liquid into the pudding cups into which the caramel sauce has been poured. If there are small bubbles floating on the surface of the cup, gently remove them with a bamboo skewer. You want to pay attention to every detail for a beautiful finish.
- Line a large pot with pudding cups and pour boiling water to about half the height of the cups. Cover the pot and steam over very low heat for 15 to 20 minutes. Place a cloth between the lid and the pudding cups to prevent water droplets from falling into the pudding. This is the secret to the delicious taste! Turn off the heat and let the pudding steam in the residual heat for 10 minutes. Ideally, the surface of the pudding should be soft and the center should shake slightly.
- Once steamed, remove from heat and refrigerate thoroughly. Chill for at least 3 hours to allow the entire pudding to settle. This waiting time will lead to an impressive mouth feel.
- Now for the climax of the excitement! Remove the cooled pudding by circling the rim of the cup with a knife and then inverting it onto a plate. Finally, the pudding is topped with a generous amount of soaked rum raisins! Enjoy the harmony of the melt-in-your-mouth pudding and the rum raisin aroma that tickles your nostrils.
point
The most appealing aspect of this pudding is its smooth texture and mellow rum-raisin aroma. Strain the pudding liquid and slowly boil it in hot water to achieve an amazingly smooth finish. Adding boiling water to the caramel sauce also prevents it from hardening and allows for a thicker texture. Adjust the amount of rum raisins to your liking. The longer you soak them, the deeper the flavor will be.

How was it, everyone? Amber no Tokimeki Kocha Pudding with Rum Raisin Fragrance”. We hope that this nostalgic yet new pudding, which is like turning back time, will bring warmth and happiness to everyone’s dining table.
