Seasonal blessings that melt in your mouth! Yuzu-scented Soy Milk Mochi Mochi Pudding – Accented with Green Tea and Black Beans
This Japanese-style pudding has a gentle sweetness that will bring a sense of comfort to your body and soul on a chilly winter day. The fresh aroma of seasonal yuzu and the new texture of glutinous soy milk pudding create an exquisite harmony. The bitterness of the matcha green tea and the sweetness of the black soybeans create a profound flavor, just like a fine Japanese confectionery. This is a soothing dish that even novice cooks can make without fail, with a simple process of mixing the ingredients and heating them in the microwave.
material
| Material name | amount |
|---|---|
| unadjusted soy milk | 200ml |
| potato starch | 2 tablespoons |
| Sugar (or sugar of your choice) | 2 to 3 tablespoons |
| salt (i.e. sodium chloride) | pinch (of something) |
| Grated yuzu peel | 1/2 teaspoon |
| powdered green tea | 1/2 teaspoon |
| Ama-natto (black soybeans are recommended) | 2 tablespoons |
| (Mint leaves (optional) | small quantity |
way of making
- Now, let the adventure begin! In a large heat-proof bowl, combine the potato starch, sugar, and salt, and mix well with a whisk. The key is to mix carefully so that the flour does not become lumpy.
- Next, add the unadjusted soy milk, a little at a time, while whisking more. It is okay if it remains powdery at first. Do not be in a hurry and keep mixing until the mixture becomes smooth. Enjoy the way the mixture turns into a smooth liquid, just like dissolving white paint.
- Once everything is mixed, add the grated yuzu peel. You will be soothed by the fresh winter citrus aroma that softly spreads here. This aroma enhances the pudding’s elegant flavor.
- Cover the bowl with fluffy plastic wrap and microwave (600W) for 2 minutes first. Once removed, mix everything together with a whisk in large batches. The mixture should begin to harden at the bottom.
- Cover with plastic wrap again, this time heating for 1 minute to 1 minute 30 seconds. This is the climax of the excitement! When the mixture begins to firm up and the entire surface becomes soft and fluffy, the heating process is complete. Adjust the heating time as you see fit. Be careful not to heat it too long or it will become hard.
- Place in a bowl while still warm. After flattening the surface, wait until the heat is removed, and then refrigerate until firm. Chilling will enhance the melt-in-your-mouth texture of the cake and make it stickier.
- To finish, sprinkle matcha powder over the top using a tea strainer, and sprinkle amanatto (black soybeans) colorfully over the top. Garnish with mint leaves if desired, and you have a beautiful “Japanese-style soy milk glutinous rice cake pudding” that looks like a dish served at a ryotei (Japanese-style restaurant)!
- Now, take a bite of the cool, refreshing pudding. The fresh aroma of yuzu (Japanese citron) will waft through your nose, and the smooth, glutinous texture will fill your mouth with delight. The bitterness of the matcha green tea and the gentle sweetness of the black soybeans add an exquisite accent to the pudding, creating a moment of peace and tranquility.
point
This is the secret to the delicious taste! When mixing soy milk and potato starch, mix the flour first and then add the soy milk a little at a time to avoid lumps. Do not heat the mixture in the microwave all at once, but mix it halfway through to ensure an even and smooth finish. It is also a good idea to add the yuzu peel after the heat is removed, as the aroma will be lost if it is overcooked. Instead of amanatto, you can serve it with kinako (soybean flour) or anko (sweet bean paste).
