Process 1: Making the matcha base
First, in a small bowl, thoroughly combine the matcha and sugar. Add a small amount of water and knead until a paste is formed. This step prevents the matcha from sticking to the dough and produces a smooth and superb dough.
Process 2: Harmonization of water and powder
Add the remaining water a little at a time to make it dry. Then add the bracken cake flour all at once. The flour is completely dissolved in the pot and ready to use.

The most important point is the “kneading” process. By continuously mixing the dough for three minutes after turning the heat down to low, as if lifting it from the bottom of the pan, the unique elasticity and melting aftertaste of warabimochi are created. Scientifically, this texture is created by the complete alpha-formation (glueing) of the starch. If you find it a little too hard, try adding just 10 ml more water the next time. To store, it is best to serve it at room temperature as soon as possible, as it will harden if you put it in the refrigerator!
