way of making

Preheat oven to 170 degrees Celsius. Separate the eggs into yolks and egg whites, and let the egg whites cool. Remove the salted cherry blossoms from the water to remove the salt, wipe off the water thoroughly, and roughly chop them.

Make the egg yolk base: Place the egg yolks and 20g granulated sugar in a bowl and mix with a whisk. After mixing for about 1 minute until the color becomes whitish and the mixture becomes lumpy, add the salad oil and milk, in that order, and mix until emulsified and shiny.

Add the sifted flour all at once and mix in a circular motion with a whisk. When the flouriness disappears, add the chopped salted cherry blossoms and transfer the fragrance of spring into the dough.

[Adventures in Meringue] In a clean bowl, whisk the egg whites. Start with a hand mixer on high speed, and when foam starts to rise, add granulated sugar (50 g) in three additions. Create a fine, glossy meringue that is so fine that the horn will be soft and bowlegged.

Add 1/3 of the meringue to the batter in step 3 and mix vigorously with a whisk to blend. The most important point is to mix the remaining 2/3 of the meringue quickly, as if scooping it up from the bottom and cutting it, switching to a rubber spatula.

[Oven Embrace] Pour the batter into the mold from a high position and sprinkle with berries at the end. bake in a 170°C oven for 35 minutes. Immediately after baking, turn the mold upside down and let it cool for 2 hours so that the cake will not shrink under its own weight and remain fluffy.

This is the secret to the delicious taste! Key Points

The biggest enemy of chiffon cake is the loss of air bubbles. If oil or water is mixed in with the meringue, the bubbles will not be stable. When mixing, be aware of the “nurture the bubbles” image by turning the rubber spatula in a large circle and turning your wrist. Cooling the cake upside down after baking is a scientific process that allows gravity to distribute the moistness throughout the cake.

The aroma of cherry blossoms that fills the room when the baked cake is unmolded is a blissful moment when you feel the arrival of spring. If stored in an airtight container, the cake will be even more moist the next day. Please enjoy it with your favorite tea cup.
