Secret Spice-Scented Reward Okara Cookies
Healthy and guilt-free okara cookies with added depth and aroma as if by magic. Feeling the warmth of handmade cookies, these are the kind of rewarding cookies that will gently soothe your tired mind and body after the busyness of the year-end season.

| maple syrup | 3 tablespoons (adjust sweetness to taste) |
| Coconut oil (melted) | 3 tablespoons |
| Unadjusted soy milk (or cow’s milk) | 50ml-60ml |
| cinnamon powder | 1/2 teaspoon |
| cardamom powder | 1/4 teaspoon |
| salt (i.e. sodium chloride) | pinch (of something) |
| As desired (toppings) | Sliced almonds, cacao nibs, etc. |
way of making
- Now let’s start preparing the magic! In a large bowl, combine the okara powder, rice flour, cinnamon powder, cardamom powder, and salt, and fluff together with a whipper. This is where the spice aroma comes in and the anticipation builds.
- In a separate bowl, combine the maple syrup and melted coconut oil and mix well. The oil will mix evenly and determine the crispiness of the cookies!
- Add the liquid from step 2 to the flour mixture from step 1 and mix gently with a rubber spatula. It is OK if the mixture is still a little powdery; this is where the appearance of the dough begins to change.
- Add the soy milk a little at a time while bringing the dough together with your hands. Ideally, the dough should be the consistency of an earlobe. Even if the dough is shaggy at first, the key is to bring it together gently without rushing. When the dough begins to come together, press it firmly together with the palm of your hand. This is the secret to deliciousness! Every time you touch the dough, you will feel the warmth of the dough in your palms and the subtle aroma of spices.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes. The dough will settle down, making it easier to form, and the texture when baked will be much better. The dough will slowly mature, as if the aroma that was sleeping is awakening.
- Preheat oven to 170°C. Place the rested dough on a sheet of plastic wrap, cover with another sheet of plastic wrap, and roll out with a rolling pin to a thickness of 3 to 5 mm. This thickness is the secret to creating a pleasant, crispy texture!
- Cut out with your favorite mold or cut into squares with a knife. When making these cookies with your children, you can make it even more fun by using star or heart molds to cut them out. Each time you cut out the molds, the cute cookies appear one after another, just like a treasure hunt!
- Place on a cookie sheet lined baking sheet and top with sliced almonds or cacao nibs, if desired. bake in the oven at 170°C for 20-25 minutes until slightly browned. When the sweet and savory aroma begins to waft from the oven, you are almost at the climax of your excitement!
- Once baked, allow to cool completely on the net. When hot, the cookies are soft, but as they cool, they become crispy and crispy. This change is one of the best parts of making homemade cookies.
