A discussion of recent search trends

Today’s Google search trends show a wide range of public interest, but what is particularly striking is the rise in entertainment-related searches such as “The Tale of Princess Kaguya” and “Ghibli. It can be assumed that this is due to people spending more time at home during the cold season and seeking indoor entertainment such as watching movies. Weather-related words such as “heavy snow” and “snow storm warning” are also at the top of the list, indicating that severe winter weather is continuing nationwide. Under such circumstances, people may naturally miss warm drinks and sweet foods that soothe the soul. Furthermore, the fact that the “Coming-of-Age Cake Chateraise” is ranked in the top ten shows that demand for dessert choices for special occasions is also continuing to be high. Sweets that combine the warmth of handmade products with seasonal ingredients and events will continue to attract significant attention.

way of making

  1. Prepare the matcha tart dough.
Cut the chilled unsalted butter into 1 cm cubes, place in a bowl sifted with flour and matcha powder, and mix to combine with the flour, crushing the butter with your fingertips. When the mixture becomes a smooth, lumpy mixture, it is ready to be used. This is the secret to a crispy texture! Work quickly to avoid melting the butter.
  2. Add powdered sugar, beaten egg yolks and cold water, and mix gently until powdery. Bring the dough together, wrap in plastic wrap and let rest in the refrigerator for at least 30 minutes.Be careful not to knead the dough too much or it will become hard!
  3. [Baking the tart dough].
Remove the dough from the refrigerator, roll it out on a floured table to 3 mm thickness, and spread it into a tart mold. Poke a few holes in the bottom with a fork, cover with a cookie sheet, place a tart stone (or raw rice, etc.) on top, and bake in a preheated oven at 180°C for 15 minutes.
  4. Remove the tart stone and bake at 170°C for another 10 minutes until browned. Once baked, remove from the mold and remove from heat. The savory aroma of matcha green tea should spread through the kitchen.
  5. Making Japanese chestnut cream
Boil or steam the peeled chestnuts until soft, then mash them with a fork while still hot. Put the mashed chestnuts, milk, and sugar in a saucepan over low heat, stirring to prevent burning. The sweetness and flavor of chestnuts are much more concentrated.
  6. Remove from heat, remove from heat, add cream (for Japanese chestnut cream) and rum, and blend in a food processor or mortar until smooth. Adjust the mixture until it is firm enough to be squeezed out with a Mont Blanc pastry blender.
  7. [Prepare white chocolate ganache (secret snowflake)]
Chop the white chocolate into small pieces. Heat the cream (for the ganache) in a small saucepan until just before boiling and pour it over the chopped white chocolate.
  8. Let it sit for 1 minute, then slowly mix with a rubber spatula to make a smooth ganache. Remove from heat and place in the refrigerator to cool slightly and harden. This is the “snowflake” part that forms the base of the Mont Blanc. The texture of the snowflakes melting in your mouth is a delightful accent.
  9. Assembly and Decoration
Spread a thin layer of white chocolate ganache on the inside of the baked matcha tart dough. Refrigerate for 5 minutes to firm up and make sure it adheres well.
  10. Combine the cream and sugar for the finishing touches in a bowl and whip with a whisk to 8 parts whipping cream. Place the whipped cream on top of the ganache-coated tart crust so that it forms a dome.Make it soft and high, as if you were making a snowbank.
  11. Put the Japanese chestnut cream into a squeeze bag with a Mont Blanc mouthpiece, and squeeze it out thinly and evenly over the domed whipped cream to form a Mont Blanc shape. Carefully draw a mountain range pattern from top to bottom.
  12. [An emotional climax!
Finally, sprinkle powdered sugar lightly with a tea strainer to create a snowy scene, and garnish with matcha powder or Japanese chestnut nectar, if desired!
  13. Refrigerate for one hour to allow the flavors to meld and become even more delicious. Enjoy the harmony of matcha and chestnuts with the cool texture.

point

For the matcha tart dough, work quickly to avoid melting the butter and do not over-knead, which is the key to a crispy texture. For the Japanese chestnut cream, carefully mix the chestnuts into the paste to maximize their flavor. White chocolate ganache is placed between the tart dough and cream to create a deep flavor and texture contrast. Chilling and hardening the ganache will also enhance its beauty when cut into pieces.
