way of making
Making fermented bean paste
- Wash azuki beans, place in a pot, add plenty of water (not included in the quantity), and bring to a boil over high heat. When the water comes to a boil, boil the azuki once, add plenty of water (not included in the quantity) again, and cook over medium heat until soft (about the size of a finger). Remove scum frequently.
- Drain the softened azuki beans in a colander (reserve some of the cooking liquid for later use). Remove from heat and place in a food processor or mash to make a paste.
- Break up the rice malt. Put the mashed azuki beans, rice malt, 200 ml water, and a pinch of salt in a clean bowl and mix well by hand. The key is to mix while making sure there are no clumps so that the koji is spread throughout.
- Place in a clean storage container and ferment for 8-10 hours in a warmer (such as the warming function of a rice cooker or yogurt maker) at 30-35°C. Stir occasionally, and when it smells sweet, it is ready. Be careful not to let the fermentation go too far, as it will become sour. Once completed, store in the refrigerator.
Making Yomogi Gyuhi
- Put the white bean flour and sugar in a heatproof bowl and mix well without lumps, adding water little by little. When the mixture becomes smooth, add the mugwort powder and mix further until the color is even. The bright green color is reminiscent of a spring field.
- Cover the bowl fluffily with plastic wrap and microwave (600W) for 2 minutes. Take out the bowl and mix well with a rubber spatula. The dough will start to become chunky from this point!
- Cover with plastic wrap again and cook for 1 minute 30 seconds to 2 minutes. When the dough becomes transparent and cakey and shiny, it is ready; you will hear a squeaking sound with each stirring, which is a sign that the gyuuhi is ready to be used.
- Remove the hot gyuuhi onto a starch-spreading bat and cut into bite-size pieces once the rough heat is removed. Work quickly while it is still warm, being careful not to burn yourself.
Daifuku.
- Divide the fermented bean jam into 8 equal portions and roll them up. The gentle sweet aroma of the red bean paste will give you a breath of fresh air.
- Spread out the gyuuhi and wrap it up with anko (sweet bean paste) in the center. The texture of the glutinous gyuhi on your fingertips and the moistness of the red bean paste are irresistible.
- After shaping, the spring-colored fermented bean paste daifuku is ready!
