Sesame-scented brown sugar karinto doughnuts ~warmth of winter, crispy and fluffy texture
Introduced here are donuts with a simple and nostalgic flavor that will warm you up on a chilly winter day. The deep sweetness of the brown sugar and the harmony of the fragrant sesame blend perfectly with the crispy outside and the soft and fluffy inside. It is a new kind of sweet, as if a traditional karinto and a fluffy doughnut had met.
material
| Material name | amount |
|---|---|
| weak flour | 200g |
| baking powder | 1 teaspoon |
| brown cane sugar | 80g |
| (cow’s) milk | 100ml |
| egg | one (object) |
| Melted butter (unsalted) | 30g |
| Ground sesame seeds (white) | 2 tablespoons |
| cooking oil | proper quantity |
| [Finishing syrup]. | |
| brown cane sugar | 50g |
| water (esp. cool, fresh water, e.g. drinking water) | 3 tablespoons |
| Ground sesame seeds (white, for finishing) | 1 tablespoon |
way of making
- Now, the adventure begins! First, prepare the dough. Sift together the flour and baking powder. This will eliminate lumps and bring you one step closer to a fluffy texture.
- Crack the eggs into a large bowl and beat well with a whisk. Add the brown sugar and mix thoroughly until the mixture is no longer coarse. When the brown sugar is dissolved and the mixture is slightly brown, it is ready.
- Add milk, melted butter, and ground sesame seeds (for the dough), which are the key to the aroma, to the bowl. When the mixture becomes smooth and liquid, the sweet and savory aroma of brown sugar and sesame seeds will waft through the air.
- Add the sifted flour mixture to the bowl all at once and mix with a rubber spatula to cut. Stop mixing when the mixture is no longer powdery and is all combined. If you mix too much, the mixture will become stiff!
- Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes. This “rest time” is the magic time that allows the dough to settle down and produce a crispy and sticky texture when fried.
- To the climax of the excitement! Take the rested dough out onto a floured table (flour not included in the quantity) and roll it out into a rectangle about 1 cm thick. Use a knife to cut it into sticks about 2 cm wide and 5 cm long. You can twist them by hand, make them into rings, or any other cute shape you like.
- Heat oil to 160°C (160°F). Gently throw the dough into the oil and fry slowly until golden brown. When the bubbles become fine and a crispy sound can be heard, it is a sign of best frying. Don’t put in too much at once; the trick is to fry it in several batches to avoid failure!
- Place the fried doughnuts on a net to drain excess oil. While still hot, go to making the finishing syrup. In a small saucepan, heat the brown sugar and water for the finishing syrup over medium heat until the brown sugar dissolves and the mixture thickens slightly. Turn off the heat and add the ground sesame seeds for finishing and stir to combine.
- The greased doughnuts are dipped into the syrup while still warm, giving them a glossy sheen and a rich brown sugar flavor. A sprinkling of ground sesame seeds for a finishing touch adds to the glamorous appearance and savory flavor.
- Enjoy a blissful moment with warm tea or Japanese tea. These doughnuts will surely warm you up from the bottom of your heart during the cold winter weather!
Here is the secret to the delicious taste! Recipe Tips
The most important point of this doughnut is the “Japanese harmony” of the depth of brown sugar and the savory aroma of ground sesame. By resting the dough in the refrigerator, the crispy and fluffy texture when fried is greatly improved. Also, by keeping the temperature of the oil at 160℃ and frying the dough slowly, the outside will be crispy and the inside will be soft and fluffy. The brown sugar syrup and sesame seeds added at the end of the frying enhances the aroma and richness, making it taste like a specialty restaurant!

How was the “Sesame-scented Brown Sugar Karinto Doughnut” this time? The crispy texture, the gentle sweetness of the brown sugar spreading through the dough, and the aroma of sesame. We hope that this happy moment experienced with all five senses will be a small comfort to you in your daily life. This winter, please spend a warm time with your loved ones with this doughnut in your hand.
