These mini roll cakes are inspired by a little fairy’s secret tea party in a snowy winter forest. The bright emerald green dough is filled with sweet and sour mixed berries and savory pistachio cream.   1. Preparation Preheat oven to 180°C and line a baking sheet with baking parchment. Sift together the flour and matcha powder.
  2. Dough making: egg yolk dough Place the egg yolks and granulated sugar (for the yolks) in a bowl and mix well with a whisk until the mixture turns white. Add the milk and salad oil in this order, mixing well each time.
  3. Making dough: Matcha green tea aroma Add the sifted flour and matcha powder to the egg yolk batter and mix gently with a rubber spatula until there is no powdery residue. If you mix too much, the mixture will become stiff, so the key is to mix quickly.
