It is a modern, Japanese-style dish that can be easily made without fermentation, yet has a moist, chewy texture that blends with the savory flavor of soybean flour and the gentle sweetness of black soybeans. We aimed for a soft, melt-in-your-mouth texture, just like a snow dough. The ingredients are simple, but the deep flavor is spreadable.
