way of making
- Prepare the golden canele: Place the milk and butter in a saucepan and heat over low heat until the butter is melted (do not boil). Remove from heat and let cool.
- In a bowl, beat egg yolks and millet sugar with a whisk until white. Add the rice flour and mix well to avoid lumps.
- Blend until smooth, gradually adding the milk/butter mixture, which has been removed from the heat. Add rum and vanilla extract to flavor. Cover the dough with plastic wrap and refrigerate for at least one hour, preferably overnight. This “resting” is the secret to the unique flavor and texture of the canele!
- Preheat the oven to 200°C. Lightly butter a canele mold and lightly dust it with flour (not included in the quantity). (For silicon molds, you can use only butter.)
- Remove the dough from the refrigerator, mix lightly, and pour into the molds up to the eighth fill.
- Bake in a preheated oven at 200°C for 15 minutes, then lower the temperature to 180°C and bake for another 25-30 minutes. The baked product should be firm and dark golden brown on the outside. Remove from the oven, remove from the heat and allow to cool completely. To enjoy the crispy texture, allow the freshly baked cake to cool slightly before serving!

- Pour the jelly liquid and fruit into a container of your choice and refrigerate for at least one hour to harden. When placed in a transparent glass, the fruits sparkle and look like jewels!
