A discussion of recent search trends
The trend at the end of April 2026 is marked by a polarization between entertainment and economic and lifestyle concerns. Along with the enthusiasm for entertainment and sports, people are turning their attention to economic trends such as the “naphtha shortage” and the “Nikkei Index,” as well as to community and lifestyle protection such as “stockpiling” and “Fussiness. Given this psychological background of ‘soothing the mind with entertainment while at the same time being aware of real-life preparedness,’ this is the right time to focus on sweets that are not only glamorous but also highly preservable and bring a sense of security to daily life.

way of making
In a bowl, combine the egg yolks and sugar (30 g) and mix with a whisk for about 3 minutes until the mixture becomes white and fluffy. Then add the salad oil and milk warmed to human skin, in that order, mixing well each time.
Add the sifted flour and matcha powder to the bowl and switch to a rubber spatula. Mix quickly, scooping up from the bottom, until there is no powdery residue.
Building the tower of clouds: Making the meringue] In a separate clean bowl, whisk the egg whites. Once the egg whites have been whisked until they are slightly pebbled, add the remaining sugar (30 g) in two batches to create a firm meringue that has a sharp point and does not fall off even if the bowl is turned upside down.
[Bonding: Fusion of Dough and Meringue] Add 1/3 of the meringue to the bowl of egg yolk batter and mix in a circular motion with a whisk to soften the batter. Divide the remaining meringue into two parts and mix gently and quickly with a rubber spatula, cutting from the bottom.
Add the amanatto (sweet soybean paste) at the end, and mix briefly a few times to distribute it all over the dough. Pour the mixture into the mold at once and drop it twice with a thump from a high position to release large air bubbles.
[Magic Oven: Baking] Bake in a preheated oven at 170°C for 30-35 minutes. Immediately after baking, turn upside down to cool, and allow to cool completely before removing from the mold.
This is the secret to the delicious taste! Key Points
The life of a chiffon cake is the hardness of the meringue and the deftness with which the batter is combined. Scoop up the meringue from the bottom with a rubber spatula in the shape of a “no” so that the air bubbles in the meringue do not collapse. Lightly dust the amanatto with flour before adding it to the cake, so that it will not sink during baking and will be scattered nicely.

Examples of mistakes we tend to make
If you mix the meringue too much or take too long to combine the dough, the bubbles will disappear and the texture will be like a “baked rice cake” with a stuffy bottom. Also, if the baking time is not long enough, the cake will shrivel up when it is removed from the mold, so make sure nothing sticks to it by sticking a bamboo skewer into it.

At the end.
The aroma of matcha green tea served in the soft spring light provides a respite from the busy daily routine. If you bake more and refrigerate them, they will stay moist and delicious for several days. Please enjoy it with your favorite Japanese tea.
