Today, I tried simmering 1kg of pork and onions in a sweet and savory sauce made with soy sauce, sugar, and ginger.
The result was a delicious, sweet and savory dish. The ginger flavor wasn’t very prominent; you only got a hint of its refreshing taste when you bit into a piece of it.

Simmered Pork and Onion Recipe (Instructions)
(1) Place 100g sugar, 100g soy sauce, 100g sake, 50g mirin, and 6 slices of dried ginger in a pot. Below is a photo of the dried ginger I used this time.

(2) Add the pork and roughly chopped onions to the pot.
(3) Place a drop lid on top and simmer for about 1 to 2 hours. This is what it looked like while simmering.

(4) Finally, stir while simmering to evaporate the liquid, and it’s done. The finished product was delicious with a sweet and savory taste. The ginger flavor wasn’t very prominent; you only got a hint of its refreshing taste when you bit into a piece of it.
