Today, I tried making a raisin pound cake using pancake mix.

The result was excellent. When using canola oil, if you mix the raisins into the batter, they tend to sink to the bottom of the cake. However, by adding the raisins on top later, the sinking was reduced.

Raisin Pound Cake (Instructions)

(1) First, I put 2 eggs (120g), 50g milk, 50g sugar, and 20g canola oil into a bowl and whisked them with a hand mixer for about 1 minute while warming them in a hot water bath. Warming them helped them froth up nicely.

(2) Next, I added 150g of pancake mix to the bowl and continued to mix with the hand mixer for about 1 minute while still in the hot water bath. Many air bubbles were visible at this stage. The batter was now complete.

(3) After that, I poured the batter into a preheated pound cake mold. After pouring, I added 15g of raisins on top.

(4) I baked it in a preheated oven at 180 degrees Celsius for 20 minutes. Since the batter was still raw after 20 minutes, I baked it for an additional 3 minutes at 160 degrees Celsius.

(5) The result was excellent. When using canola oil, if you mix the raisins into the batter, they tend to sink to the bottom of the cake. However, by adding the raisins on top later, the sinking was reduced.
