Coconut Milk and Carbonated Jelly 2: Still Separating

I tried to make carbonated jelly with coconut milk again.

Unfortunately, the coconut milk and carbonated water separated again (I used more coconut milk this time, so the transparent part is only at the bottom).

I can see some bubbles in the coconut milk, so they did mix to some extent… I guess coconut milk and carbonated water might just not be a good match.

Carbonated Jelly with Coconut Milk: Instructions

(1) I heated 50g of coconut milk and mixed in 5g of gelatin and 30g of sugar until smooth.

(2) I added the remaining 150g of coconut milk to the mixture from (1), stirred for 10-20 seconds, and then added 100g of carbonated water to finish.

(3) I poured the mixture from (2) into a cup and let it chill in the refrigerator for 1.5 hours.

(4) Unfortunately, the coconut milk and carbonated water separated again. I can see some bubbles in the coconut milk, so they did mix to some extent… I guess coconut milk and carbonated water might just not be a good match.
