Today marks my second attempt at making vegetable pound cake. Learning from my previous failure, I increased the amount of flour and added more milk.

The finished product was quite satisfying and tasted like lightly seasoned mashed potatoes with other vegetables mixed in. It could probably use a bit more salt.

Savory Pound Cake Recipe (Instructions)

(1) Dice the potatoes and carrots. Roughly chop the spinach and bacon.

(2) Sauté the potatoes and carrots in 10g of oil. When the potatoes start to become translucent, add the spinach and bacon, 1g of salt, and a dash of black pepper. Sauté until wilted. The vegetables for the pound cake are now ready.

(3) Separate the two eggs into whites and yolks.

(4) Make meringue from the egg whites. For a firm meringue, whisk with a hand mixer for about 1 minute, then add 10g of sugar and whisk for another minute. The meringue is now ready.

(5) Whisk together the 2 egg yolks, 20g of oil, 80g of milk, and 5g of soy sauce. Once somewhat combined, add 100g of flour and mix with a hand mixer.

(6) Add the sautéed vegetables and bacon, and the meringue to the mixture from (5). Mix with a spatula until combined. The batter is now complete.

(7) Line the bottom of the cake pan with parchment paper to prevent sticking. Then, pour the batter into the cake pan and sprinkle 30g of cheese evenly over the top.

(8) Tap the bottom of the pan about ten times (to remove air bubbles), then place it in the oven (preheated to 180°C). Bake at 180°C for 30 minutes. This time, the vegetables were well-embedded in the batter.

(9) After letting it cool slightly, remove the pound cake from the pan and cut it. Thanks to the parchment paper, it came out easily.

The finished product was quite satisfying and tasted like lightly seasoned mashed potatoes with other vegetables mixed in. It could probably use a bit more salt.
