A discussion of recent search trends

Today’s Google search trends show that “Risshuchu” (立冬) is ranked as a reminder of the changing of the seasons. As autumn deepens and we become more aware of the onset of winter, the need for hot beverages and comforting sweets increases. Also notable among the many entertainment-related searches are cute characters such as “Diancie” and names of idol groups such as “NiziU Nina” and “SixTONES. The popularity of these suggests that people tend to focus on the cuteness of the appearance and the worldview that fans can easily relate to. In the world of sweets as well, there may be a demand for not only delicious food, but also for visuals that look good on SNS and a storyline that ties in with the guesswork. Furthermore, “Kentucky Fukubukuro” is also high on the list, indicating a strong interest in deals and limited edition products for the year-end and New Year’s holidays. In homemade recipes, the key to capturing future trends will be to incorporate a sense of the season while also making them visually pleasing and a little extravagant.

The smooth texture, which melts in your mouth, and the contrast of the beautiful golden color of the baked cake will stimulate all five senses. Enjoy a heartwarming and luxurious moment with this item that shines like a jewel.

Ingredients (for 1 18cm round mold)

Material name amount
cream cheese 200g
Granulated sugar (A) 60g
egg yolk For 3 pieces
fresh cream 100ml
(cow’s) milk 50ml
weak flour 20g
Yuzu peel (grated) 1 tablespoon
citron juice (used in cooking as a refreshing summer drink) 1 tablespoon
albumen For 3 pieces
Granulated sugar (B) 40g
Lemon juice 1/2 teaspoon
(for decoration) powdered sugar, mint leaves, shredded yuzu peel proper quantity

way of making

  1. [The Magic of Preparation] Prepare for hot water baking by placing a bat of water in an oven preheated to 180°C. Line the molds with cookie sheets and get them ready to go. Let the cream cheese come to room temperature to make it easier to mix smoothly.
  2. [Cream cheese temptation] In a bowl, combine the room temperature cream cheese and granulated sugar (A) and mix well with a whisk until smooth. The key is to carefully mix until the cream cheese is thick and creamy.
  3. [Golden joy] Add the egg yolks one at a time, mixing well each time. Mix thoroughly until the mixture becomes a beautiful golden color, just like the sun.
  4. [Harmony of scents] Add the cream, milk, and yuzu juice and mix until combined, then add the sifted flour in three batches and mix carefully until there are no lumps. Add the grated peel of the yuzu and mix until there are no lumps.
  5. [Meringue Ball] In a separate bowl, whisk the egg whites with the lemon juice. Add the granulated sugar (B) in three additions, while whisking, to form a fine meringue with a pinched horn. Ideally, the meringue should stand up softly and dance when you lift the whisk.
  6. [Elegant fusionAdd 1/3 of the meringue to the prepared cream cheese batter and mix gently so as not to break the foam. The trick is to use a rubber spatula to scoop up the mixture from the bottom. Add the remaining meringue in two parts and mix carefully until evenly combined. Aeration of the dough here will give it a fluffy texture.
  7. [Departure to the Oven] Pour the dough into the prepared mold and gently drop it onto the table a few times to release the air inside. This will make the surface of the baked product smooth.
  8. [Impressive baking] Bake in a preheated oven (hot water baking) at 180°C for 15 minutes, then lower the temperature to 160°C and bake for 40 to 50 minutes. The cake is done when a bamboo skewer is inserted and the dough does not stick to the skewer. At the end of the baking time, the sweet and fresh aroma wafting out of the oven is enough to make you happy.
  9. [Brilliance of the finish] When the heat is removed, remove from the mold and chill thoroughly in the refrigerator. Chilling will allow the dough to settle down and accentuate its moist texture. Sprinkle with powdered sugar to taste, garnish with mint leaves and shredded yuzu peel, and you have a work of art, “Melted Yuzu Fromage Souffle with Golden Drops”!

This is the secret to the delicious taste! Key Points

The most important point of this recipe is to maximize the fresh aroma of yuzu. By adding grated yuzu peel to the dough, a pleasant aroma spreads softly while baking and when you bring it to your mouth. The meringue should be whipped to a fine and firm consistency to create a melt-in-your-mouth, fluffy texture. The trick to avoid failure in hot water baking is to wrap the mold tightly or double it to prevent water from getting into the bottom. To avoid cracks on the baked surface, instead of cooling them down immediately after taking them out of the oven, lower the temperature in the oven little by little for a more beautiful result.
