way of making
- Prologue: Encounter with Dough
Place HM in a bowl and add cold butter cut into 1 cm cubes. Rub the butter together with your fingertips while crushing it with the flour to make a sandy, sand-like consistency (sabrage). When the aroma of butter rises in the air, it is ready. - Spinning Bonds: Forming Fabrics
Add the milk a little at a time and mix gently with a spatula. When the mixture is still a little powdery, turn it out onto a table and knead it lightly to bring it together.
