This time, I tried making carbonated jelly again, adjusting the ingredient ratios.

Compared to last time, increasing the water content resulted in a slightly smoother texture. On the other hand, I felt the sweetness could be reduced a bit. Skimming off the foam helped somewhat.

Calpis Soda Jelly Recipe (Instructions)

(1) Add 5g gelatin and 45g sugar to 50g hot water and stir well until smooth.

(2) Add 160g soda to (1) and stir for about 10-20 seconds. Done.

(3) Pour (2) into cups and leave in the refrigerator for 1 hour.

(4) The finished product had a slightly smoother texture due to the increased water content. On the other hand, I felt the sweetness could be reduced a bit.
