This time, I tried making a carbonated jelly with coconut milk.

As you can see from the finished product, the coconut and carbonated water separated. The texture was not fizzy but rather a bit sharp, which was disappointing.

Coconut Milk Carbonated Jelly Recipe (Instructions)

(1) I added 5g of gelatin and 30g of sugar to 30g of hot water and stirred well until smooth.

(2) I added 100g of coconut milk to (1) and stirred for about 10-20 seconds, then added 170g of carbonated water and finished (I stopped stirring immediately after adding the carbonated water because it frothed).

(3) Poured (2) into cups and left them in the refrigerator for 1.5 hours.

(4) As you can see from the finished product, the coconut and carbonated water separated. The texture was not fizzy but rather a bit sharp, which was disappointing.
